The fryers have not been in use for some time and there is no oil in the units. Fryers must be thoroughly cleaned and sanitized. Provide proof of cleaning (such as pictures) to the EHS within a week or before the fryers are next used, whichever comes first. Rodent droppings and food debris are collecting underneath equipment. Provide proof of cleaning of floors under equipment within a week or before the truck is next used to prepare food, whichever comes first.

Fysh Sushi And Poke, 5 S Morehall Rd., Malvern, June 14. Fail. Observed food staff touching sushi fish, a RTE food with bare hands. Staff washed hands and put on gloves to prevent potential contamination of food. Observed multiple raw meats stored above ready-to-eat (RTE) foods in the prep top in the kitchen. This has the potential to cause cross-contamination. Person in charge moved the raw animal products to the bottom shelf. Observed multiple sauce bottles throughout without labels of the name of the food. This has the potential to contaminate food with allergens. Person in charge provided labels during inspection. Observed an in-use rice scooper stored in room temperature water. This has the potential to cause pathogen growth and in-use utensils must be kept at 41F or below or hot held at 135F or above, or replaced every 4 hours. Scooper was removed and person in charge replaced in rice cooker to maintain temperature. Observed cups being used as scoops in dry goods. Cups don't have a handle and cannot be used to scoop food. A scoop with a handle was replaced to prevent potential contamination of food by person in charge. Observed flour and bread crumbs used for breading raw shrimp at room temperature. As this touches raw shrimp (a time/temperature controlled for safety food), they need to be kept at 41F or below or discard after breading raw shrimp to prevent potential pathogen growth. Fish observed thawing in reduced oxygen or vacuum packaging. These packages must be opened to allow oxygen to enter prior to beginning the thawing process to prevent the growth of harmful pathogens. Fish was discarded by person in charge. The high temperature dishwasher is out of order and not maintaining the required temperatures for proper sanitization of food contact surfaces. Repair the machine and utilize the 3-compartment sink until the temperatures can be verified by EHS for the mechanical dishwasher. Paper towel dispenser empty at the handwash sink in the bathroom in the kitchen area. Person in charge provided paper towels during inspection.

Correct within 7 days. Facility backdoor and garaged door are damaged with holes large enough for vector entry. Repair back door within 7 days and garage door within 14 days. Garage was cleaned, however, additional cleaning is still needed in the used oil storage area. Correct within 7 days. A few co*ckroaches observed throughout the facility. Continue with pest control and continue to remove bottled and canned drinks from plastic and cardboard packaging in basem*nt. Correct within 7 days.

Sunny Ridge Restaurant Inc, 960 Ridge Rd. Pottstown, June 14. Fail. A container of potatoes in the kitchen, and another container of potatoes in the walk in were stored open with no covering. Cover all containers of food if they are not in use. In the front area, a scoop was stored in the ice bin with the handle touching the ice. Utensils must be stored so the portion touching the hand does not touch the food. Scoop was moved so that the handle was not touching the ice. In the kitchen, a container of cooked potatoes was stored directly on the floor. In both the walk in cooler and walk in freezer, foods and food containers were stored directly on the floor, rather than 6 inches off the floor. Move all foods and food containers 6 inches off the floor. Multiple TCS foods requiring either cold-holding below 41°F or hot-holding above 135°F (eggs, hash, liquid waffle and pancake mix, cooked potatoes, etc) were kept on the counter at room temperature for an extended period of time. All foods were measured at between 75°F-87°F. TCS foods were discarded on location. All TCS foods must be kept at 41°F or below or 135°F or above, or a time log must be kept indicating what times foods were removed from refrigeration or hot-holding, and indicating what times the foods must be used or discarded by. For now, facility is keeping foods refrigerated until they need to be used. Food facility does not have available quaternary ammonia test strips or test kit to ensure quat concentration is between 200-400 ppm. Sample pouch of 15 test strips provided for sanitizer in use. Obtain appropriate test kit within a week. The following pieces of equipment need repairs: - The walk in cooler needs additional insulation added to cover the entirety of the refrigerant line, - The walk in freezer needs the insulation around the refrigerant line replaced, - The mop sink needs to be unclogged. The hood fan was recently replaced, however the replacement fan was the incorrect size and is not sufficiently removing heat from the kitchen. Kitchen temperatures were measured at over 90°F today, which is a hazard to both employees and to food, as food equipment is designed to operate at typical room temperatures. Hood fan must be repaired in order to allow the hood to remove excess heat and condensation from the kitchen. The following pieces of equipment need to be cleaned: - The undersides of all beverage dispensers must be cleaned and sanitized, especially the juice dispenser, - The downstairs walk in freezer has ice collecting on the floor and on the door gasket that must be cleaned, - The hood duct needs to have a professional cleaning scheduled. In the women's restroom, the garbage can lid will not remain closed. Repair or replace the unit so that the garbage can lid will stay closed. The following areas of the facility need to be cleaned: - The floor of the entire kitchen, especially under and behind equipment, - The floors of the stairs and basem*nt in areas where food and restaurant equipment is being stored, - The path to the mop sink is blocked by debris and equipment. There must be a clear path to the mop sink so that it is easily accessible. Mops are not being hung or inverted to air dry. Hang or invert mops.

Giovanni's Pizzas Inc / Elverson, 18 W. Main St., Elverson, June 13. Fail. A Food Employee was observed not following proper handwashing procedures. Employee washed their hands for less than 20 seconds and did not use soap. Employee re-washed hands on location. A Food Employee was observed washing their hands at the 3-compartment sink rather than the designated handwash sink. Employee was advised and washed hands in the handwash sink. Multiple open employee beverages and personal foods were found in food preparation areas of the kitchen. Employee personal foods or drinks must be stored away from foods for customers. Employee foods and drinks were moved during the inspection. In the basem*nt, two container of onions were stored open with no covering. Onions were moved to a covered container during the inspection. In the sandwich prep top, a container of cooked onions and a bag of greens was stored directly on top of lettuce, which could contaminate the lettuce. Container of onions and the bag of greens were removed. Employees advised not to store food containers on top of uncovered foods. Squeeze bottles of sauces were not labeled with the name of the food inside. Label all containers of food. The downstairs standing freezer has some ice collecting at the back. Ice must be removed before it begins collecting on packages of food. Observed in-use knives stored between tables, an area not easily cleanable & sanitized. Knives were removed to be cleaned. Observed wet wiping cloths in the kitchen, not being stored in sanitizer solution. Wet wiping cloths must be stored in containers of sanitizer when not being used. Wiping cloth was removed during the inspection. A plastic bin holding bread has a cracked cover that needs to be replaced. Hot-held meatballs were measured at 120°F, rather than 135°F or higher. Meatballs must be reheated to 165°F before being hot-held at 135°F. Meatballs were discarded. Employees were advised to check reheating temperature of meatballs using a probe thermometer to make sure meatballs are reaching 165°F. All foods in the countertop cold-hold unit were measured at 50°F, rather than 41°F or below. All TCS foods (a container of raw chicken and a container of raw beef) were discarded. A container of frozen raw chicken was moved to a working refrigerator. Unit must be repaired, replaced, or removed. No TCS foods can be stored in this unit until it is holding foods at 41°F or below. In the upper section of the sandwich prep top across from the cook line, multiple items were above 41°F: - Cooked onions were double-panned in a container of lettuce (54°F) - Cheese and meats were in a cold well lined with parchment paper, an insulator (52°F), - A plate of chicken was stored on top of the cold wells (57°F) All foods above 41°F were discarded. TCS foods must be stored directly in the cold wells, and no foods should be above the lip of the cold wells. The sandwich prep top did not have a easily-visible thermometer for measuring air temperature inside. A thermometer was placed inside the unit during the inspection. Floors under equipment need to be cleaned, especially at the floor/wall junction and in corners. Basem*nt floor under the shelving was cleaned during the inspection. Clean kitchen floors by the end of the day. Facility does not have a current Chester County Certified Food Manager. Within a week, turn in the Chester County Certified Food Manager application, the application fee, and a copy of the valid food manager certificate.

In the pizza area, pizza crusts were stored uncovered under the paper towel dispenser, and people reaching for paper towels could drip water from wet hands onto the pizza crusts. Pizza crusts must be covered and stored where they cannot be dripped on. For today, pizza crusts were covered and moved away from paper towel dispenser. The paper towel dispenser will be moved to be closer to the hand sink in the near future. In the ice cream area, several cans of pineapple chunks had been opened and left in the refrigerator overnight. These cans are designed to be emptied as soon as they are opened, and foods inside the cans must be moved to a reuseable food-grade container if they are not used immediately. The pineapple chunks were moved to a food-grade container during the inspection. The door leading outside from the kitchen was left open without anything in place to protect entry by pests. The air curtain was turned on during the inspection. The floors underneath the following pieces of equipment need to be cleaned: - Cook line equipment, especially around the fryers, - Underneath the kitchen refrigerators and freezers, - Underneath the ice cream area cold-holding equipment. Within a week, send proof of cleaning (such as pictures) to the EHS. Proof of cleaning may be sent by email or text.

King's Garden Restaurant, 308 S. High St., West Chester, Follow-up, June 13. Pass. The facility removed the grease trap themselves and did not have a professional inspect the grease trap as required. Facility must have a licensed professional inspect where the grease trap was and document whether the facility needs to reinstall the grease trap or if there is another grease trap in the facility. The floor / wall juncture throughout the entire kitchen area is not coved and closed to 1/32 inch. Inspect the entire facility and repair any broken cove bases. The food facility needs to obtain a new Chester County Certified Food Manager as the current food manager is not present at the facility enough to supervise and train food employees.

Lincoln Diner / Valley, 1202 W. Lincoln Hwy., Coatesville, Follow-up, June 13. Fail. Small Pepsi refrigerator near cooking line and the Beverage Air refrigerator located in front dining area were observed above 41°F. All TCS food was discarded during inspection. As stated previously, do not use until repaired. Pepsi refrigerator is designed for prepackaged food only and must be removed from kitchen area. Remove Pepsi refrigerator within 5 days. Several precooked foods stored in refrigeration were observed without dates. Date all precooked refrigerated food kept for more than 24 hours. Correct immediately. Hamburgers and eggs are cooked per customers request and may be served undercooked. A consumer advisory is required to notify customers on menu, table tent or placard. Consumer advisory must be large enough for customers to read. Correct within 7 days. All refrigeration must have a temperature measuring device (i.e. thermometer). Provide thermometers for refrigeration within 5 days. Facility is reusing containers used for commercially packaged food. These are considered single use containers and cannot be reused for food storage. Provide commercial grade reusable food containers. Correct within 7 days. The following locations were observed dirty from grease accumulation: 1)Table below grill 2)Table below 4 burner stove 3) Sides of cooking equipment. Clean within 72 hours. The floor below and wall behind the cooking equipment, including gas line were observed dirty from grease accumulation. Clean within 72 hours. Mop sink and closet were observed cluttered and sink was inaccessible. Clean closet and store mops and brooms in closet. Correct immediately.

New clubhouse/tavern kitchen: Flour stored at room temperature at the cook line was used last night to bread raw meat. Flour was discarded during the inspection. Food ingredient storage containers (2 squeeze bottles storing sauces and several dry goods), in the clubhouse/tavern kitchen, were not labeled with the common name of the food. 2 dry ingredient shakers in the mansion house kitchen were also unlabeled. Label all food ingredient storage containers. Ice scoops in the main clubhouse kitchen were stored at the top of the ice machine which is an area not easily cleanable & sanitized. Surface was unclean during the inspection. Ice scoops were removed during the inspection. Store in an easily cleanable location. Soda gun holders were observed in disrepair in the following location and are not easily cleanable/non-absorbent: 1. New clubhouse/tavern bar 2. Main clubhouse bar ("mdr"/middle) 3. Pool snack bar (this one appears to be in good repair and can cleaned and sanitized. If upon cleaning the holder is not in good repair - replace.) Replace. The following food contact surfaces were observed to have residue and were not clean to sight and touch. Clean and sanitize the following: 1. Tabletop can opener blade in main clubhouse 2. Tabletop can opener blade in new clubhouse/tavern kitchen 3. Ice machine interior in clubhouse/tavern kitchen 4. "MDR"/middle soda gun nozzle in main clubhouse bar 5. Soda gun nozzle in the turn cafe in new clubhouse. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean the following: 1. Due to droppings: Floor/wall junctures in main clubhouse bar and kitchen and pool kitchen 2. Floors under the central cook line in the main clubhouse kitchen 3. Interior of discard sink in mansion house kitchen. Observed clean food equipment stacked while wet and not allowing time for draining and/or air-drying in the new clubhouse/tavern. Re-train staff. Mansion house kitchen: The handwash sink located next to the discard sink and in the server area do not have water at a temperature of at least 85°F. Repair/adjust. Cove base missing in the storage area to the left when entering the main clubhouse bar. Install cove base. Paper towel dispenser empty at the handwash sink in the new clubhouse bar/tavern bar. Paper towels were supplied during the inspection. Ceiling tiles are stained/damaged in the following areas and need replaced: 1. Storage area to the left when entering the main clubhouse bar 2. To the right of the hood in the banquet kitchen at main clubhouse Ensure there are no leaks and replace tiles. Mouse droppings were observed at the floor/wall juncture in the main clubhouse bar and kitchen and in the pool kitchen area. Complete the following: * Provide the Department with the most recent Pest Control Reports. * Continue pest management services at least weekly and submit reports to Department. * Clean and sanitize floor/wall junctures and maintain clean * Routinely monitor facility for signs of pests. * Keep all foods covered and routinely inspect incoming shipments for pests. * Keep all plumbing in good repair. Ensure there is no stagnant water on the floor. Ants observed near tabletop can opener in main clubhouse kitchen. Have pest control treat for ants in this area and also comply with the above. Facility does not have chlorine sanitizer for their 3 compartment sink. Food grade chlorine sanitizer ordered on site. Handwashing sinks were not supplied with paper towels. Make sure paper towels are supplied to ensure proper handwashing. The food facility does not employ a certified employee as required. An employee has attended an approved training class, but has not applied for Chester County Health Department Certificate. Obtain one immediately.

The nacho cheese was reportedly opened today and dated today- 6/11. Use or discard within 7 days. It was reported that leftover cheese is removed from the dispenser and cooled in the refrigerator for use the next day. Ensure the leftover cheese sauce is cooled from 135F to 41F or less within 6 hours. Nacho cheese sauce is reheated to 135F in the dispenser in less than 2 hours.

Filters are cleaned by an outside agency that swaps out facility's filters about every 2 weeks. The "loaner" filters are not the same weight as the facility filters causing the filters to lift. Filters must be properly weighted & fitted. Contact your filter cleaners to ensure proper filters are used in your hood. Supply regular hand soap (not dish soap) and paper towels to the hand sink.

Containers were labeled during the inspection. Several food dispensing utensils in dry goods observed stored in the food and not with handle above the top of the food. Ensure scoop handle is stored above the top of the food at all times and discontinue use of bowls as scoops. Observed wet wiping cloths in food prep area not being stored in sanitizer solution. Obtain designated sanitizer buckets and re-train staff. Observed wiping cloths in extremely unclean condition in throughout kitchen on floors and tables. Dirty wiping cloths must be placed in designated hampers to be laundered. Re-train staff. Batter was held at 45°F, in the small walk-in cooler, rather than 41°F or below as required. Repair/adjust to maintain foods at 41°F or below as required. Unsalted butter soaking in water was held at 60°F (room temperature), in the cook line area, rather than 41°F or below as required. Butter was discarded during the inspection. Yogurt was held at 61°F, in the one door cooler by the cook line, rather than 41°F or below as required. Unit was not plugged in. TCS foods in this unit were discarded. Food Facility did not obtain written approval from the Department before pickling vegetables to extend shelf life which is a specialized processing method. Discontinue practice immediately and submit required paperwork to the Department. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean all floors (including behind cookline and under equipment) and shelves in the kitchen and back dry good hallway. Maintain cleanliness. Observed clean food equipment stacked while wet and not allowing time for draining and/or air-drying. Equipment was removed to be washed, rinsed, and sanitized. Re-train staff. Observed unclean equipment stored on "clean equipment" racks. Facility must designate which racks are for clean equipment and which racks are for dirty. It was discussed that additional racks/shelves are needed for clean equipment. If shelf to the left of the "wash" compartment at the 3 compartment sink is used for clean dishes - a shield must be installed. Small stainless steel table to the right of the dishwasher can be used for clean rack of dishes only. Dirty equipment cannot be stored there. Dirty equipment (including wet grinders) cannot be left overnight. Wall in the back dry storage hallway is in disrepair/roughened and is not a smooth and easily cleanable surface. Repair wall. Screen door to the outside, located in the kitchen of the food facility is not self-closing. Adjust/fix door to self-close in order to prevent insect entry. It was determined that these items were erroneously dated. The deli ham was reportedly opened/sliced on 6/6. The packages were re-dated with an opening/sliced date of 6/6. Use or discard by 6/13/24. Time in lieu of temperature being used in the food facility to control ready to eat Time/Temperature Controlled for Safety (TCS) foods (pizzas) without written procedures or documentation to verify disposition of food. Proper time-tracking was implemented for the pizzas. Pizzas were reportedly removed from the oven at 11:50am- discard by 3:50pm. It was reported that the pizza slices are sold within 4 hours. Observed container of cooked onions stored at room temperature- internal temperature of onions was measured at 71F. Onions were reportedly cooked more than 2 hours prior to the inspection- onions were discarded. Ensure consistent time-tracking of all TCS foods at all times. Provided and reviewed "Time as a Public Health Control" document. Comply at all times. Remove cardboard from shelves across from the 3 bay sink. Remove tin foil on the wall behind the cookline. Cardboard and tin foil are not acceptable surface finishes as they are not durable and easily cleanable.

Stonewall Links, 375 Bulltown Rd., Elverson, June 11. Pass. In the North Course bar, an employee was observed touching cut fruit for drinks with bare hands. All ready-to-eat foods, such as cut fruit, must only be handled with gloved hands or utensils. Employee was advised on location. Cups were being used as scoops throughout the facility. Remove all cups and use scoops with handles, with the hand-contact portion of the handle being stored so it is not touching the food. In the North Course kitchen, food utensils were stored in a container of room-temperature water, rather than water at 135°F or above. Utensils must either be stored on a cleaned and sanitized surface, or in water that is 135°F or above to prevent microbe growth. Utensils were removed to be cleaned during the inspection. In the main kitchen walk in freezer, boxes of foods are stored directly on the floor, rather than 6 inches off the floor as required. Move all foods and food boxes 6 inches off the floor. In the North Course bar hot dog and popcorn area, several of the hot dogs on the rollers were below 135°F, and hot-holding temperatures were not being monitored regularly. Hot dogs were discarded, and employees were advised to check hot dog temperatures at least every hour to ensure hot dogs are being heated to 135°F within 2 hours, and are being hot-held at 135°F or above. In Harry's kitchen, the Avantco glass-front door refrigerator on the left was holding hot dogs at 45°F (discarded) and orange juice at 43°F (moved to another refrigerator), rather than 41°F or below as required. Unit was turned down and the temperature was measured at 41°F by end of inspection. All other foods in unit were non-TCS or employee personal foods. In Harry's kitchen, the prep top closest to the hand sink was at 42.4°F, rather than 41°F or below as required. No foods were measured above 43°F and thus no foods had to be discarded. Temperature of the unit was turned down, and the unit was measured at 33°F by end of inspection. In the main kitchen, the refrigerated drawers underneath the grill were at 47.3°F and 55.7°F, rather than 41°F or below as required. Drawers must be repaired, and no foods can be stored in the drawers until they are holding foods at 41°F or below. In the North Course bar hot dog and popcorn area, the left-side Edgestar mini fridge was at 46.9°F, rather than 41°F or below. Only non-TCS foods (Gatorade and bottle water) are being stored in the unit. Unit must be repaired to hold foods at 41°F or below, and a sign was placed on unit indicating that it is out of order. Thermometers could not be located or were not easily accessible in the following cold-holding units: - Main kitchen, the new glass-front dessert cooler by the ice machine and dry storage area, - Harry's kitchen, the Avantco glass-front door refrigerators, - North Course bar hot dog area, both Edgestar mini fridges Place a thermometer in an easily-visible location in all cold-hold units. In Harry's kitchen and the North Course kitchen, there was no method of measuring the dish surface temperature of dishes cleaned in the high-temp dishwasher, to ensure dish surface temperature is reaching at least 160°F. Within a week, obtain a waterproof maximum temperature registering thermometer or 160°F dishwasher temperature stickers for these dish machines, and advise staff to measure dish surface temperature daily. In the North Course kitchen, the sanitizer bucket was at 200 ppm chlorine, rather than 50-100 ppm chlorine or 200-400 ppm quat. Employees were not using test strips to test sanitizer concentration. Bucket was emptied and refilled with quat sanitizer from the sink. Quat sanitizer concentration was at 200 ppm. The ice chute of the main kitchen ice machine, a food contact surface, was observed to have food residue and was not clean to sight and touch. Clean and sanitize the inside of the ice machine. Wastewater from the North Course ice machine is draining directly to the ground outside, which is not an approved plumbing system. The ice machine must drain to a sewage system with an air gap, rather than outside. In the bar of Harry's kitchen, the bar hand sink was blocked with a hand towel and a cutting board. Towel and cutting board were removed during the inspection. The outside dumpsters at both the main kitchen and the North Course kitchen were left open, which could attract pests. Advise all employees to close dumpsters when they are not in use. Multiple doors leading outside had gaps at the bottom that could let in rodents or other pests. Install a door sweep or other method of sealing gaps to all doors leading outside, to prevent pests from entering. In the main kitchen, the hand sink by the ice machine and dry storage area was not stocked with paper towels. Paper towels were brought to the sink during the inspection. Rodent droppings were found in the following areas: - In Harry's kitchen, in the corner with the soda boxes, - In the North Course kitchen downstairs area near the door leading outside, - In the North Course walk in area, - In the North Course ice machine area. Thoroughly clean all floors of droppings, seal all gaps leading to the outside, and have the pest control company service the facility with extra attention to these areas. In several locations, mops are not being hung or inverted to air dry. Advise employees to hang or invert mops so the mop head can dry. In the main kitchen, a spray bottle of cleaner was not labeled with the name of the contents. Label all containers of cleaning chemicals.

Penn Brew Station (new Owner), 627-631 W. Baltimore Pike, West Grove, June 10. Fail. Observed 2 containers of partially cooked french fries maintained at room temperature. Internal temperature of the french fries was measured at 54F/67F. The french fries were reportedly partially cooked at 10:30am- observed violation at 1pm. The french fries were discarded during the inspection. Cooked french fries must be maintained at 135F or more or 41F or less. Comply at all times. Hot Holding Unit: Observed internal temperature of meatballs/sauce at 104F-109F. The hot holding unit was not set at the proper temperature where the meatballs/sauce was located. Exact time of removal from temperature control could not be determined therefore the meatballs/sauce were discarded. Ensure proper hot holding at 135F or more at all times. Continental bain marie (in front by window): The ambient temperature of this unit was observed at 35F however salami, turkey and ham held in the top portion of this unit was measured at >41F. These items were discarded during the inspection. It appears the a couple of containers in the top portion of this unit were overstocked because temperatures were observed at 41F or less at the bottom of these food items. Do not overstock containers. Maintain all TCS foods at 41F or less at all times- check internal food temperatures routinely. Ambient temperature was measured at 37F in one of the top containers. Observed cardboard used on counter top refrigerator shelves and a wet cloth used in some top conatiners of the bain marie. Remove all cardboard and cloths from these units. Cardboard and cloths are not durable or easily cleanable and they are absorbent which may promote bacteria growth. Observed ice accumulation on utility piping inside walk-in freezer. In addition, there is a broken PVC utility pipe below the fan unit with a bucket used to capture the condensate. Remove all ice accumulation and make necessary repairs to prevent ice accumulation. Deli slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. The deli slicer was cleaned and sanitized during this inspection. A review of cleaning and sanitizing procedures for the deli slicer appears satisfactory. Maintain in a clean and sanitary condition at all times. Observed excessive fly activity in the front food preparation areas. Contact your pest control operator to conduct a site assessment to eliminate all fly insect activity. Provide copy of pest control operator service report. Observed working container of degreaser taken from bulk supplies, and not marked with the common name of the chemical. The spray bottle was labeled during the inspection. Ensure all containers used to store toxic materials/chemicals are clearly labeled to identify their contents.

Pennypacker Country Club Snack Bar, 120 Pennypacker Rd., Downingtown, June 10. Pass. Raw burgers were being stored above RTE foods. Make sure raw products are stored below any RTE foods. Employee swapped them immediately. Hood vents were observed to be very dirty. Clean immediately and make sure hood vents are cleaned often. Paper towels were not available at both hand wash sinks upon inspection. Make sure handwash sinks are always supplied with both soap and paper towels.

Sabih @ Camphill Cafe, 1601 Pughtown Rd., Phoenixville, Opening, June 10. Pass. Shelves over the prep sinks were holding employee first aid equipment and medication, which could potentially drop into and contaminate the sinks, which are a food-contact surface. Store all first aid equipment and employee personal items away from food preparation areas.

The Stables Kitchen & Beer Garden, 160 Park Rd., Chester Springs, June 10. Fail. Buttermilk and half and half were past the manufacturer's expiration. Food items were discarded on site. Food facility does not have available chlorine sanitizer test strips or test kit to determine appropriate sanitizer concentration. Order immediately. The wash solution temperature in the mechanical warewash equipment sanitizing with chemicals was 115 °F, rather than not less then 130°F, as required. Use 3 compartment sink until dishwasher has been repaired. Soda gun holders were observed to have residue. Clean and maintain to ensure proper cleanliness. Build up of dirt on the base of the 3-compartment sink drain. Clean and maintain. Upstairs handwash sink next to the office/employee restroom was leaking. Fix to a tight seal. No soap and paper towels at the bar handwash sink. Provide immediately to ensure proper handwash.
