When it comes to weekend breakfasts, one of our favorites around here is pancakes. It’s hard to beat a nice fluffy pancake that’s golden on the outside and tender inside. With lots of syrup of course!
While it’s super easy to grab a box of store-bought pancake mix, add in an ingredient or two and cook – it’s just as easy to have your own HOMEMADE pancakes on the weekend.
All you need is a little preparation ahead of time ONCE to whip up a batch of this homemade pancake mix recipe to give you a bunch of weekends of easy-to-make pancakes!
This pancake mix recipe uses only 5 ingredients and will take you less than 5 minutes to mix together.
Once you do, you’ll have six batches of pancake mix to use whenever you’re ready to cook them.
The recipe below makes 6 cups of mix, but you can double or triple the recipe and save yourself some time in the long run.
When it comes time to making the pancakes, all you do is add an egg and a cup of milk to one cup of your homemade mix.
Then you can say that you always make your own pancakes from scratch. Look at you, all home-cooky and all!
You can also use the mix to make lots of other pancake variations. Here are three of my favorites:

I like to print them out on label paper and stick right to the jar, but you could also print on plain paper and glue to the front, or print on heavyweight paper, punch a hole in the corner and attach to the jar with a piece of ribbon or bakers twine.

If you run out of pancake mix, you can make pancakes at home with just a few simple ingredients: flour, baking powder, salt, and a bit of sugar. Once you mix those dry ingredients, you'll add the milk, an egg, and butter to create a terrific pancake batter.
It's easy to find boxed pancake mix on sale for just a few dollars. So, if you use organic flour and organic sugar, your homemade pancake mix will cost you more. However, if you buy flour, sugar, baking soda, and baking powder in bulk, the cost per pancake is cheaper than a boxed mix.
Flour: This homemade pancake recipe starts with all-purpose flour. Baking powder: Baking powder, a leavener, is the secret to fluffy pancakes. Sugar: Just a tablespoon of white sugar is all you'll need for subtly sweet pancakes.
"The oil in mayonnaise helps moisten the recipe and acts as an adequate substitute for the liquid an egg would have added." It also does a bit of leavening, since mayonnaise is made from eggs and is already emulsified.
1. Use Milk/ Alternative Milk Instead Of Water. Even though the mix may call for water, you can easily substitute that for an alternative milk (I like oat milk). You may have to add a dash more due to the difference in consistency, but it'll taste so much better!
It should be thick enough that it will fall from your spoon in clumps, not thin, runny streams. The lumps help keep water from flowing and causing the mixture to spread out too much when cooking. This is one key to keeping the pancakes tall. Lumpy batter also holds on to air pockets as the pancakes cook.
I realize these mixes are supposed to be faster and easier than cooking up a batch of homemade pancakes, but honestly, from-scratch pancakes just taste much better than anything you can make from a box mix. They are also easy to whip up and take only about a minute longer to prepare than "quick" mix pancakes.
Do you use plain or self-raising flour for pancakes? For thicker pancakes, use self-raising flour. If you don't have any self-raising flour in the pantry you can make your own at home using plain flour and baking powder. This also lets you control the raising agents in your batter for thicker pancakes.

A popular brand of just-add water pancake mix is Aunt Jemima Buttermilk Complete. This just-add-water mix is a blend of dry ingredients like flour enriched with niacinamide, thiamin mononitrate, riboflavin, and folic acid (all forms of Vitamin B), sugar, salt, and leavening agents like baking powder and baking soda.
"Here in the U.S., pancakes are typically prepared using all-purpose flour," says Frank Tegethoff, who leads innovation at King Arthur Baking. "This yields pancakes that are fluffy and tender."
Since pancakes don't rely on gluten formation, you can substitute just about any kind of flour - rice, millet, oat, etc. You can also use a combination of a gf flour and nut meal.
To fix runny batter, just use a sifter to add in flour by the teaspoon. While flour will help thicken the batter, adding too much will result in something akin to elastic dough, which does not make for especially great pancakes.
For Better Make-Ahead Pancakes, Freeze the Batter!
Instead of baking up a double batch of pancakes this week and stashing them in the freezer, just double the batter and enjoy half for breakfast and freeze the rest of the batter for another day.

They work well together because while almond flour doesn't absorb liquid well, coconut flour does, which leads to lighter, fluffier pancakes that hold together well.
